Composite Photo Creation from Video Frames

I need help extracting frames from personal video to create a composite photo. The composite will serve as a personal memory. Essentially a prized trophy fish and me, neither are in same shot and distance is changing albeit there may be reference data points for scaling.

Requirements:
- Extract 10-50 frames from provided personal video footage
